Mustard originally refers to a herbaceous plant native to the Mediterranean basin whose seeds are used to prepare the eponymous product.

The manufacture of mustard, both Dijon and old-fashioned, includes several stages which are as follows: Cleaning, flattening, soaking, grinding (it is at this stage we obtain old-fashioned mustard ). To obtain Dijon mustard, you must then go through sieving and deaeration. To obtain a flavored mustard we then proceed to heating, softening the mustard, then finally flavoring by adding herbs or spices.
